Pardess Merlot 2014
The internationally renowned English wine writer Jancis Robinson placed the wines of Hevron Heights Winery very high on her list of Israeli wines.
The PARDESS wine is made from the Merlot grape and was aged in oak barrels for 18 months. The coolness of the Mediterranean Sea and the warmth of the Negev ensure that the grapes can ripen optimally. As they mature, they build up sugars and acids that give the wine its full rich flavor and deep colour.
In the Pardess wine you can taste ripe plums and dark cherries with notes of spices and vanilla (from the oak). The wine has beautiful ripe tannins (the natural preservative in the grape) so that the wine can be stored for a number of years. If you want to drink the wine now, give it 30-45 minutes to air.
