2020 Valpolicella Ripasso Superiore Monti Garbi
This Valpolicella is a nice stepping stone to the Amarone. Strong aromas of ripe red fruit. Light vanilla note and nice spiciness. Long aftertaste.
This Valpolicella Superiore Ripasso is made from 70% corvinone and corvina, 20% rondinella and 10% croatina and oseleta grapes. All come from densely planted orchards (8000 sticks / ha.) on the calcareous hills of the Monti Garbi or 'poor rugged mountains'.
The harvest is picked from the beginning of October, immediately pressed and fermented at a low temperature for 24 hours. Part of the juice gets extra flavor because it is poured (ripasare) over the must left over after making Amarone. And since those remaining skins are still nicely soaked with a lot of flavor, the Ripasso also gets slightly fuller aromas, more power, structure and character without the typical sweetness and high alcohol content for Amarone. The second fermentation then starts and the wine can mature for a year in Slovenian oak and another twelve months in the bottle.
Delicious with hard cheeses and a nice steak.
