The wine comes from the vineyards surrounding the historic 16th-century Benedictine monastery where the winery originated. The wine has a deep dark purple color that immediately reveals its intensity. The aroma is dominated by ripe blackcurrants and blackberries, followed by notes of coffee, licorice, cocoa, roasted herbs, and subtle balsamic tones. Manual harvest and aging in French oak
After a very strict selection, the grapes are hand-picked and transported to the winery in small crates. Only the best grapes are processed. Fermentation takes place in specially designed tanks, after which the wine ages for approximately fifteen months in 275-liter French oak barrels, half of which are new. Subsequently, the wine receives additional rest in large French oak foudres, allowing it to develop more complexity without the oak dominating.
