The village of Saint-Romain is located next to AuxeyDuresses. The vineyards are quite high and steep with a south-southeast orientation under the famous cliffs. The soil consists of limestone with some clay veins.
VINIFICATION: The hand-harvested grapes are pressed and fermented in oak barrels, one third of which are new wood. The wine is then aged on its yeast cells for another 15 months before bottling.
