Fresh Asparagus Salad with Smoked Salmon & Lemon Dressing

– Perfect with Apostelhoeve Cuvée XII , the Dutch summer wine

Looking for a light, tasty and typically Dutch summer dish? This fresh salad with green asparagus, smoked salmon and lemon dressing is easy to prepare and forms a sublime combination with the fresh acids and fruity elegance of Cuvée XII from the Apostelhoeve.

Ingredients (for 2 persons):

  • 250 g green asparagus

  • 100 g smoked salmon (slices)

  • 1 bag of lamb's lettuce or rocket

  • 6 radishes, thinly sliced

  • 1/2 cucumber, shaved into ribbons

  • 2 tbsp pine nuts (lightly toasted)

For the dressing:

  • Juice of 1/2 lemon

  • 3 tbsp extra virgin olive oil

  • 1 tsp honey

  • Freshly ground pepper and sea salt


Preparation:

  1. Cooking asparagus: Cut off the woody ends of the asparagus. Blanch them in lightly salted water for 3–4 minutes and then rinse with cold water.

  2. Dressing: Mix lemon juice, olive oil, honey, salt and pepper in a small bowl.

  3. Assemble salad: Mix lettuce, radish, cucumber and asparagus in a bowl. Arrange smoked salmon on top.

  4. Finishing: Sprinkle with the dressing and garnish with pine nuts.


Serving suggestion

Serve this dish for lunch or a light dinner with a chilled bottle of Cuvée XII (approx. 8–10 °C). Add a slice of sourdough bread or some Dutch potatoes for a complete meal.
