Ingredients (for 2 persons):

250 g green asparagus

100 g smoked salmon (slices)

1 bag of lamb's lettuce or rocket

6 radishes, thinly sliced

1/2 cucumber, shaved into ribbons

2 tbsp pine nuts (lightly toasted)
For the dressing:

Juice of 1/2 lemon

3 tbsp extra virgin olive oil

1 tsp honey
-
Freshly ground pepper and sea salt
Preparation:

Cooking asparagus: Cut off the woody ends of the asparagus. Blanch them in lightly salted water for 3–4 minutes and then rinse with cold water.

Dressing: Mix lemon juice, olive oil, honey, salt and pepper in a small bowl.

Assemble salad: Mix lettuce, radish, cucumber and asparagus in a bowl. Arrange smoked salmon on top.

Finishing: Sprinkle with the dressing and garnish with pine nuts.
Serving suggestion
