Summer means eating outside, light dishes and a nice glass of rosé. And what goes better with a sultry evening than a plate full of fresh flavours and an elegant wine in hand?
Today we share a simple yet delicious summer dish: Grilled salmon with avocado-mango salsa , perfectly combined with the MiP Classic Rosé from Provence.
The dish: Grilled Salmon with Avocado-Mango Salsa
Ingredients (for 2 persons):

2 salmon fillets
-
1 ripe mango, diced
-
1 avocado, diced
-
1/2 red onion, finely chopped
-
Juice of 1 lime
-
Fresh coriander (or parsley), finely chopped

Pepper, salt, olive oil
Preparation:

Marinate the salmon briefly with a little olive oil, salt and pepper.

Grill the salmon in a grill pan or on the BBQ for approx. 3–4 minutes per side until cooked.

Meanwhile, mix the mango, avocado, red onion, lime and coriander into a fresh salsa.

Serve the warm salmon with the salsa on top or next to it.
The wine: MiP Classic Rosé
