This light, tasty salad combines the delicate flavours of seafood with summer vegetables. The Bonbon Rosé is a wonderful accompaniment with its fresh red fruit tones, minerality and soft floral undertones
Ingredients (for 2 persons)

250 g clams (vongole), rinsed well

1 medium zucchini, sliced

10 cherry tomatoes, halved

1 tbsp capers

½ lemon (juice & zest)

4 tbsp extra virgin olive oil

1 tsp honey
-
Pepper and sea salt

Fresh flat-leaf parsley, finely chopped
Preparation

Marinade: Combine lemon juice, zest, olive oil, honey, salt and pepper in a bowl.

Zucchini: Brush slices with olive oil and grill for 2–3 minutes per side until lightly golden brown.

Clams: Heat a dash of oil in a pan, add clams, pour over some of the marinade and cover with a lid. Steam for 4–5 minutes until they open.

Assemble: Place grilled zucchini, clams (without closed ones), cherry tomatoes and capers in a bowl. Sprinkle with the remaining marinade and garnish with parsley.

Serve: Nice and lukewarm or at room temperature – perfect for summer!
