Bonbon Rose with Fresh Grilled Venus Clams & Zucchini with Citrus-Olive Oil Dressing

This light, tasty salad combines the delicate flavours of seafood with summer vegetables. The Bonbon Rosé is a wonderful accompaniment with its fresh red fruit tones, minerality and soft floral undertones

Ingredients (for 2 persons)

  • 250 g clams (vongole), rinsed well

  • 1 medium zucchini, sliced

  • 10 cherry tomatoes, halved

  • 1 tbsp capers

  • ½ lemon (juice & zest)

  • 4 tbsp extra virgin olive oil

  • 1 tsp honey

  • Pepper and sea salt

  • Fresh flat-leaf parsley, finely chopped

Preparation

  1. Marinade: Combine lemon juice, zest, olive oil, honey, salt and pepper in a bowl.

  2. Zucchini: Brush slices with olive oil and grill for 2–3 minutes per side until lightly golden brown.

  3. Clams: Heat a dash of oil in a pan, add clams, pour over some of the marinade and cover with a lid. Steam for 4–5 minutes until they open.

  4. Assemble: Place grilled zucchini, clams (without closed ones), cherry tomatoes and capers in a bowl. Sprinkle with the remaining marinade and garnish with parsley.

  5. Serve: Nice and lukewarm or at room temperature – perfect for summer!

Serving tips

  • Keep the wine chilled at around 10–12 °C, this accentuates freshness and elegance

  • Serve with a crusty baguette and a side dish such as green salad or asparagus.

  • Ideal as a patio dish or light lunch with friends.
